White tea is the first stage of the tea leaf and has the least amount of processing.  The oxidation level can range between 0-3% and is picked at the beginning of April. Despite popular belief, white tea does have caffeine because it is picked in the spring when the tea trees have the most nutrition.  White tea is prized for its delicate taste and the value is reflected in the amount of buds that need to be picked in order to make a full kilogram.
